Sourdough Pancakes Recipe

Sourdough pancakes are really easy to make and are incredibly tasty. Today I will share with you my favourite recipe for sourdough pancakes, including one of my favourite topping ideas.


Recipe

Makes 10 small pancakes.

Pancake Ingredients:

4 tablespoons of sourdough starter
1 cup of spelt wholegrain flour 
1 cup of spelt flour
2 cups of water 
1/2 teaspoon of bicarbonate of soda
1/2 teaspoon of salt 

Topping Ingredients:

Blueberries, Alpro soya yoghurt, cinnamon, cacao nibs, honey or maple syrup. 

Or top with toppings of your choice.

Method:

The night before, combine well the sourdough starter, spelt flour and water in a medium bowl. Cover and leave overnight to ferment.

When you are ready to cook the pancakes, stir in the remaining pancake ingredients, adding a little more water if necessary to give a good batter consistency.

Heat a lightly greased griddle or shallow frying pan over a medium to high heat.

Using a ladle, spoon a ladle full of the mixture into the centre of the hot pan, allow it to spread out, or for smaller pancakes use half a ladle full per pancake.

Cook for 2-3 minutes or until the edges begin to dry and holes have formed on the tops. Carefully turn the pancakes over and cook an additional 2-3 minutes.

Serve hot with your toppings of choice.

This recipe can be prepared in advance and reheated. These pancakes also freeze well.
